Kiwi jam

Here’s a refreshing recipe for homemade kiwi jam:

Ingredients:

  • 2 lbs (900 g) ripe kiwis, peeled and chopped
  • 2 cups (400 g) granulated sugar
  • 1/4 cup (60 ml) lemon juice
  • 1/2 teaspoon ground ginger (optional)

Instructions:

  1. Prepare the kiwis:

    • Peel the kiwis and chop them into small pieces.
  2. Combine ingredients:

    • In a large pot, combine the chopped kiwis, sugar, lemon juice, and optional ground ginger. Stir well to mix.
  3. Cook the mixture:

    • Place the pot over medium heat and cook, stirring frequently, until the sugar dissolves. Bring the mixture to a boil.
  4. Simmer:

    • Once boiling, reduce the heat and let it simmer for about 20-30 minutes, stirring occasionally, until the mixture thickens. To test for doneness, place a small amount on a cold plate; if it gels, it’s ready.
  5. Jar the jam:

    • Pour the hot jam into sterilized jars, leaving about 1/4 inch of headspace. Seal with lids.
  6. Cool and store:

    • Let the jars cool completely at room temperature. Store in the refrigerator for up to 3 weeks or process in a water bath for longer shelf life.

Tips:

  • Kiwi contains natural pectin, but you can add a little pectin if you prefer a firmer jam.
  • Adjust the sugar to taste, especially if your kiwis are very sweet or tart!
